After the coffee cherries are harvested, the focus shifts from the farm to careful preparation. The beans are processed, dried, and sorted to ensure only the highest-quality beans move forward. Once selected, the beans are roasted to bring out their natural character. Roasting is a careful balance, too light and the flavor can be underdeveloped, too dark and it can become bitter. Our goal is to highlight the unique qualities of each bean while maintaining a smooth, enjoyable finish.
The final step in our process is brewing, where precision and technique truly make the difference. We carefully dial in each brew by adjusting grind size, brew time, and water temperature to match the specific characteristics of the beans. Freshly ground coffee is used to preserve aroma and flavor, and water quality is closely monitored to ensure a clean, balanced extraction. Whether brewed as espresso or drip coffee, each method is chosen to highlight the bean’s natural notes without overpowering them.
